As most of you know, I have been on a health kick lately and with a health kick comes lots and lots of cooking. This means no eating out (though I’m finding that difficult!). Having said that, some restaurants add plenty of healthy options to their breakfast menu. For example, this restaurant where you can get Breakfast west Melbourne has a variety of healthy and not so healthy options, and they’re all delicious! However, I’m sticking to cooking for myself, as this will teach me that I can in fact cook. To eat healthily, I have to get creative in the kitchen, and that’s what I want to share with you today. Breakfast has always been my struggle. I hate waking up in the morning and having to cook. With what feels like 20 million other things going on (like feeding my children) I wanted to find something that I could cook and “meal prep” my breakfast and still be tasty. That’s where my Breakfast Muffins come in handy and today is your lucky day. I’m going to share this delightful muffin with you.
What you will need:
A muffin pan, bacon, eggs, onion, spinach, fresh garlic, feta cheese, salt & pepper, and olive oil.
Be prepared to clean up a big mess when you are done.
The first thing you will want to do is pre-heat the oven to 350 F*. Take your skillet and pan out and let them get hot. Before you start to cook your bacon, you will want to prep. Cut your onion and mince your garlic. When you start to cook your bacon, you will want to make sure to only cook your bacon half way. Do not overcook your bacon because it will finish cooking in the oven. Once you’re done cooking your bacon, set it aside and let cool while you’re sauteing your onion, garlic, and spinach. When you are sauteing your onion, garlic, and spinach you will want to cook the onion and garlic first. Once it is cooked then, you will add your spinach and finish cooking.
Now comes the fun part. Pull out your muffin pan. First, cut your bacon in half and line your muffin cup with your bacon. Next, you will add your egg on top of the bacon. Salt and pepper your egg. Then you will take a spoon full of your onion, garlic, spinach mix and place on top. The last thing you will want to do is place your feta cheese on top.
You are now ready to bake your muffins. Place in the oven for 12 to 15 minutes or until the egg is cooked to your liking.
You are now ready to sit down and enjoy your egg breakfast muffin.

But now that you’ve finished cooking you will walk into your kitchen and maybe, maybe not have a small meltdown about having to clean up the mess that once was your beautiful kitchen. Fret-not I have you covered. Or at least this may help you a little. š I did try to give a small warning!

When I went grocery shopping and headed to pick up my Scotch-BriteĀ® Scrubbing Dish Cloths (only $4.99) I was excited to see that they came in a 2 pack and in 4 different colors. Gray, mint, coral, and navy. After looking and making sure they were right for me I noticed that they were fully washable, reusable and got the job done. While cleaning but not scratching my counters it was the perfect fit.
But let’s get back to my DIY š
You will need just a few things. A piece of wood, paint, (any that you like) two-three hooks, and stickers.
The first thing you will want to do is paint your wood. I wanted my piece of wood to look worn and used so I also used Marbelizing spray.
Once your wood is dry, find where you want to hang up in your kitchen. you will need to hang it up with a screw or any other way that you would like to keep it in place. Once hung on the wall you will want to place your stickers. I wanted mine to say Clean House. Because I made it specifically for my New Scotch-BriteĀ® Scrubbing Dish Cloths. Place your hooks in the bottom and hang up your cloths.
