It’s beginning to look a lot like Minions, every where you go!

Have you ever wondered what was going through your child’s mind when they want to watch a movie over and over again. I love watching as my youngest learns the songs and dances along to his favorite movies. As of lately, it’s been all about minions! Minions everything. Seeing how he loves it so much we decided to have a minions Christmas this year. Not only have I made them a minion Christmas tree but we also had a Minions watch party with the release of the newest Minions movie that just came out on December 8th.

I cannot tell you how excited I was when I finally saw it on the shelf at my local Target in its cute little Blu-Ray/DVD MetalPak. To top it all off, you also get a $5 gift card when you purchase the MetalPak only available at Target. Amazing right? Who doesn’t love a Target gift card? Not only do you get a $5 Target gift card but the MetalPak also comes with 40 minutes of exclusive content! ONLY at Target do you get all of this amazing content and tons of other minion products to go along with your movie that not only make your movie watching more exciting but can also be given as a gift. I had to make sure that our movie night was the best it could be as I want my children to enjoy this and remember how much fun they had. That’s why we decided to get a subwoofer for home theater system so that we had the best sound quality that we could possibly get. As there is nothing worse than watching a film with bad sound is there? I can’t wait to try it out!

I wanted to surprise the children with a fun movie night, I worked all day on making the Christmas tree and added some fun Gingerbread Minions to top off the night. Something I want to share with you. I did have to make two batches to get the recipe just right and wanted to share my tips with you. These are not only the cutest gingerbread cookies I’ve ever made but also taste the best. Crispy on the outside but just soft enough on the inside to keep you coming back for more and that’s just what Nolan did. I couldn’t keep his hands away.


Dry Ingredients:
(I like to use Archer Farms brand when it comes to all of my seasonings.)

  • 3/4 teaspoon of Archer Farms ground Ginger
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of Archer Farms ground cloves
  • 1/2 teaspoon of Archer Farms Allspice
  • 1 teaspoon of Archer Farms ground cinnamon
  • 3 cups of flour (I used 1.5 cups of flour and 1.5 cups of wheat flour) You can use both or just one.
  • 1 teaspoon of baking soda
Wet Ingredients:
  • 8 tablespoons of butter (room temperature is always easier)
  • 1/2 cup of brown sugar
  • 1/4 cup of vegetable shortening
  • 2/3 cup of molasses
  • 1 egg
  • Royal icing.
The first thing you will want to do is pull out your mixer. Place your butter and vegetable shortening and mix until well combined. Once those are mixed well, you will want to add your brown sugar, egg, and molasses. Let it continue to mix while you put the next steps together.
Next you will want to pull out a separate bowl and blend all of your dry ingredients together. You will want to set your mixer on a low setting while mixing in your dry ingredients one spoon full at a time. Once your mixture starts to thicken up, you have two choices. You can stop the mixer and mix the rest by hand to make into a dough. Or you can continue to mix with a mixer but by doing this, you will have to let sit in the fridge a little longer.
Once you have made your dough, you will want cut into two different sections and use plastic wrap. Plastic wrap your dough and let sit in the fridge about 3 hours or until your dough has become cold and easy to roll out.
Take a small amount of flour and roll out your dough, cut with your cookie cutter into your favorite shapes and bake for 10 minutes. Not a second longer. We don’t want our cookies too hard or too crispy.

Once your cookies are finished cooking and cooled off it is time to decorate with your royal icing. I of course decorated mine like minions but feel free to decorate as you please (or not). One quick tip when it comes to icing. Make sure that your royal icing isn’t too soft or your cookies may end up like these.
