Gluten Free, Egg free, Dairy Free Cupcakes.

Do you, someone in your family, or a special friend have so many allergies making it seem impossible to eat anything with the word cake in it? These must try Gluten-Free, Egg-Free-Dairy-Free Cupcakes are just what you need.

If you read my blog or even if you know my family,  you know how bad my son’s allergies are. There are many things that Luke can’t have; Dairy, eggs, gluten, wheat, sweet potato and until recently, rice. Making it extremely hard when it comes to baked goods.
This is where my good friend Sylvia aka “Slater Cake” comes into play. Sylvia makes the most amazing/moist baked goods you can think of. When she told me she was going to come up with something for my boy I was overwhelmed with joy. It’s so rare that we find something that he can eat like this that is not stale. She invited me over to decorate the cupcakes and have fun with the boys. Decorating for Nolan and cupcakes for Luke.
Nolan had such a great time. Luke tried to help, and Nolan made such a big mess!
1.5 cups of gluten-free flour
3 Tbsp of cocoa
1 cup of sugar (granulated pure cane sugar)
1 Tsp of baking soda
1/2 Tsp. white vinegar
1 Tsp of pure vanilla extract
5 Tbsp of vegetable oil
1 cup of water
My Favorite Cupcake pans!
Pre-heat oven to 350 degrees F.
Start by mixing all dry ingredients (flour, cocoa, sugar and baking soda)
Add vinegar, vanilla and vegetable oil and last water before mixing.
Mix until smooth and should have a very liquid constancy.
Pour batter into cupcake cups evenly.
Bake for 18 min.
Take out of the pan when finished to cool down so it does not overcook in a hot pan.
Sylvia might have forgotten how messy small children can be.
End results come tomorrow…. But in my opinion, this is the best results I have ever seen!

    My niece is highly allergic to eggs and so I've had my fair share of desserts with no eggs. I'm not a huge fan of them but I think it's because I'm so used to all the extra ingredients. I will pass this recipe to her!

    I don't mind that they're GF, DF with no sugar – but do they taste like good ol' chocolate cupcakes? Your kid on the left looks like he's diving right in, so that must mean it's good 🙂

    Aww, I love the pictures of your two little guys helping make the cupcakes! Wow these actually look pretty good. I am always on the lookout for good dairy free recipes. Being lactose intolerant is my plague.
